SALAD: Black Bean and Cucumber Salad

  • 1 can Black Beans (may substitute Great Northern Beans)
  • 2 tablespoons Garlic Olive Oil
  • 3 tablespoons Sicilian Lemon Balsamic
  • 1/8 teaspoon crushed red pepper flakes
  • 1 teaspoon dried or fresh minced cilantro (may substitute parsley)
  • 1/2 medium cucumber, peeled and seeded
  • salt to taste


  1. Rinse beans thoroughly and drain well.
  2. Combine Garlic Olive Oil, Sicilian Lemon Balsamic, pepper flakes, and cilantro.
  3. Whisk together well.
  4. Cut cucumber into small dice, add to beans & cover with vinaigrette.
  5. Adjust seasoning, mix thoroughly, and chill.
