SALAD: Black Bean and Cucumber Salad

Ingredients
- 1 can Black Beans (may substitute Great Northern Beans)
- 2 tablespoons Garlic Olive Oil
- 3 tablespoons Sicilian Lemon Balsamic
- 1/8 teaspoon crushed red pepper flakes
- 1 teaspoon dried or fresh minced cilantro (may substitute parsley)
- 1/2 medium cucumber, peeled and seeded
- salt to taste
Directions
- Rinse beans thoroughly and drain well.
- Combine Garlic Olive Oil, Sicilian Lemon Balsamic, pepper flakes, and cilantro.
- Whisk together well.
- Cut cucumber into small dice, add to beans & cover with vinaigrette.
- Adjust seasoning, mix thoroughly, and chill.
