CHILI: White Bean Chili

Ingredients
- 1/4 cup Cilantro & Roasted Onion Olive Oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- sea salt
- 1 pound ground chicken
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 4 cups chicken stock
- 2 cans great northern beans, drained and rinsed
- 2 cans cannellini beans, drained and rinsed
- 2 cans hominy, drained and rinsed
Directions
- In a large pot, heat the olive oil over medium heat. Add the garlic, onion, and peppers; season with salt and sauté for 5 minutes. Add ground chicken and seasonings, and continue to sauté until chicken is thoroughly cooked.
- Add chicken stock, beans, and hominy; cover and bring to a boil. Reduce heat slightly and cook for 30-45 minutes, or until thickened, stirring occasionally. Season with additional spices and salt to taste. Serve hot.
