CHILI: White Bean Chili

Ingredients

  • 1/4 cup Cilantro & Roasted Onion Olive Oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • sea salt
  • 1 pound ground chicken
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 4 cups chicken stock
  • 2 cans great northern beans, drained and rinsed
  • 2 cans cannellini beans, drained and rinsed
  • 2 cans hominy, drained and rinsed

Directions

  1. In a large pot, heat the olive oil over medium heat.  Add the garlic, onion, and peppers; season with salt and sauté for 5 minutes.  Add ground chicken and seasonings, and continue to sauté until chicken is thoroughly cooked.
  2. Add chicken stock, beans, and hominy; cover and bring to a boil.  Reduce heat slightly and cook for 30-45 minutes, or until thickened, stirring occasionally.  Season with additional spices and salt to taste.  Serve hot.
