CHICKEN: Cilantro & Roasted Onion Grilled Chicken with Aioli

  1. To prepare the chicken, place chicken breast in a flat dish.  In a small bowl, mix the Cilantro & Roasted Onion Olive Oil, White Premium Balsamic, lime juice, salt, and pepper until well combined.  Pour over the chicken and run to coat both sides.  Marinate for at least 30 minutes.
  2. Once the chicken has marinated, preheat the grill to medium heat.  Place chicken breast on grill and cook for 5 to 7 minutes, or until golden brown.  Turn the chicken and continue cooking for another 5 to 6 minutes or until completely cooked.  Remove from heat; let rest for 3 to 4 minutes and then serve.
  3. To prepare the aioli, whisk together the yogurt, Cilantro & Roasted Onion Olive Oil, garlic, lime juice, salt, and pepper in a small bowl.  (Or, blend all ingredients together in a food processor.) Refrigerate until ready to serve.

Serving Suggestion:  Served with assorted grilled vegetables, such as squash, zucchini, red pepper, onion and sweet potato.
