CORNBREAD: Spinach Cornbread

Recipe compliments of Charlotte Easler, Crescent Olive Co-Owner.

Ingredients

  • 1/4 cup + 2 tablespoons Butter (flavor) Olive Oil
  • 1 package frozen spinach, thawed, drained
  • 1 box Jiffy Cornbread mix
  • 6 ounces cottage cheese
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 medium onion, chopped

Directions

  1. Combine all ingredients.
  2. Pour into into iron skillet or 2-quart pie dish.
  3. Bake at 350o for 45 minutes.

* To make cornbread muffins (pictured), bake 350o for 30-35 minutes (look for a golden brown color).
