GRANOLA: Saba & Chocolate Chip Granola Bar

Recipe compliment of Lauralee Thompson. She and her husband Carl are long-time customers of The Crescent Olive in Columbia, SC.

Ingredients

  • Dry Ingredients
  • 3 1/2 cups rolled oats
  • 3/4 cup almonds, coarsely chopped
  • 3/4 cup pistachios, coarsely chopped
  • 1 cup chocolate chips
  • 1/2 teaspoon cinnamon
  • Wet Ingredients
  • 1/4 cup Saba Balsamic Reduction
  • 1/3 cup Cloister Salted Honey (available at The Crescent Olive)
  • 1/2 cup your favorite UP Extra Virgin Olive Oil
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 300oF. Place parchment paper on a cookie sheet and set aside.
  2. In separate bowls, mix dry ingredients and wet ingredients.
  3. Pour wet ingredients over dry ingredients and gently fold until mixed.
  4. Spread granola mixture onto prepared parchment paper cookie sheet.
  5. Bake 40 minutes; let cool 5 minutes; then cut into bars. Allow bars cool to room temperature before serving.
